Holy Jalapeño, this is the heartiest, best tasting taco soup everrrr. I’m from Texas so of course my taste tends to lean to the Mexican food side and this is one of my favorites.
It’s easy, it’s quick and you never have to dirty any pans. Really, stay with me and I’ll explain.
There’s are mucho ways to make it, so you can tweak it however you want. I’m looking for simple, so my ingredients are mostly pantry staples. If I don’t have one particular item, I might omit it.
Here’s my version of the ever incredible Taco Soup. Get your favorite bag of tortilla chips ready because there will be a mad rush for bowls and spoons when it’s done.
Your two most important tools are a crockpot and a can opener. Let those two kitchen appliances do all the work for you. No kitchen work is a beautiful thing, are ya with me on this?
I’m about to blow your mind on the very first step of this taco soup recipe, ready?! Start off by browning a pound of coarse ground hamburger meat in your crockpot. I know, it’s going against your instincts. Please try it this once.
Bonus points if you use a crockpot liner for less mess:)
Set your crockpot on high for about an hour and let it brown the meat for you. I’ve got instructions if you’re still not convinced, click here. When the ground beef is browned, drain and rinse. Put it back into the crockpot.
Now it’s time to put that can opener into action. Add into the crockpot without draining, 1 can of Rotel tomatoes, 1 can of corn, 1 can of black beans, 1 can diced green chilis, 1 can of light red kidney beans and 1 packet of taco seasoning. Now for the best ingredient of all: 1 small jar of jalapeños with the juice. **Disclaimer: if you don’t like them, don’t use them ok
If you are in love with additional salt and pepper, go for it. I’m not gonna stand in your way. I’ve even started adding chipotle seasoning to almost everything I cook. My toddler doesn’t notice most of the time.
Fun fact: milk helps a burning tongue.
Once you’ve thrown all that goodness together in the crockpot, set it on low and stand back. Don’t lift another finger unless you’re taste-testing which is not only expected but encouraged.
Garnishes that I use are: shredded cheese, sour cream and more jalapeños. I use the tortilla chips as little shovels to deliver that spicy deliciousness to my mouth. Oh, you do too? Awesome 🙂

- 1 lb ground beef
- 1 can Rotel tomatoes
- 1 can corn
- 1 can black beans
- 1 can light red kidney beans
- 1 can diced chilis
- 1 small jar jalapeños
- 1 packet taco seasoning
- garnishes: set these aside
- sour cream
- shredded cheese
- tortilla chips
- using a crockpot, brown 1 lb ground hamburger meat on high for 1 hour or until done
- or using a cooktop, brown 1 lb ground hamburger meat on medium
- drain and rinse the cooked meat, put back into the crockpot
- add to the crockpot (without draining) the remaining ingredients except the garnishes
- cook on low for 4 hours or until done
- spoon a portion into your bowl and top with garnishes
- pair with tortilla chips
