Y’all, I made the best sandwich today.
Digging around in my frig for some lunch, I was trying to ignore the last two scoops of leftover chili. I mean…how can anyone be happy with only getting two scoops of chili? Get my chili recipe HERE
Just when I thought settling for a grilled cheese was my best option, an idea popped into my head. Let me state for the record that I don’t have food epiphanies very often. Today must have been my lucky day.
I just so happened to have this wonderful pre-sliced Italian bread that I would use to hug this epic sandwich I was about to make.
Using real butter, I coated one side of two pieces of bread and laid one piece in a preheated frying pan. (I just bought one like this) Margarine is fine, I made the switch to using real butter exclusively about five years ago
Next, I put about a fourth a cup of fine shredded cheddar on the bread. On top of the cheese, I put the last two scoops of my chili. This was starting to smell amazing.
And because we use an embarrassing amount of cheese in this house, I put another fourth cup of the cheese on top of the chili. Melty goodness is what I’m thinking here!
Finally, I was toping it off with the other piece of buttered bread to form this beautiful leftover chili inspired sandwich.
Flipping it over wasn’t pretty, some of the little pieces of cheese fell out of the side but, other than that, it toasted to perfection.
By this time, I was really excited to try this grilled chili cheese sandwich. And let me tell ya, I wasn’t disappointed. Almost like a superior version of a sloppy joe.
The next time you have leftover chili … please save some to try out this recipe. Any bread will be fine although the Italian grilled up so nice that I’d still recommend it.
My next grilled chili cheese sandwich will have a stack of jalapeños too!
- 2 scoops chili
- 1/2 cup shredded cheese or sliced cheese
- 2 pieces bread
- 2 tbsp butter
- Preheat your frying pan on medium
- butter one side of 2 pieces of bread
- Lay buttered side down in pan
- sprinkle with 1/4 c of cheese
- Ladle 2 spoonfuls of chili on top of cheese
- Add 1/4 c of cheese over the chili
- top with the other slice of buttered bread.
- Toast for several minutes until golden brown
- Flip carefully to avoid losing your cheese
- Finish toasting until golden brown or done.
